Salad "Zhanilyk"


The salad belongs to Kyrgyz cuisine and features a very interesting combination of ingredients. It is served with greens and canned cherries. The salad is hearty and meaty, enough to feed 4-5 people!

Ingredients:

Beef — 400 grams
Eggs — 4 pieces
Potatoes — 1-2 pieces
Cabbage — 250 grams
Canned peas — 150 grams
Apple — 1 piece
Canned cherries — 100 grams
Salt — to taste
Black pepper — to taste
Greens — to taste
Mayonnaise — to taste
9% table vinegar — 1 tablespoon

Prepare the ingredients for the salad.

Boil the beef in salted water until tender, which takes about 2 hours at a gentle boil. It’s better to boil the beef in advance and let it cool well, so it won’t fall apart when sliced.

Boil the potatoes and eggs, then cool them down. Drain the liquid. Wash the apple and cabbage. Cut the cabbage into thin strips, similar to how you would for borscht. Transfer it to a frying pan, add a couple of pinches of salt and a tablespoon of vinegar, and sauté the cabbage until it wilts. Note that the cabbage is sautéed without fat! Stir constantly.

Cut the boiled meat, boiled potatoes, fresh apples, and eggs into small sticks, add the green peas, salt, spices, mix with the cabbage, and dress with mayonnaise. Mix well.

Place the finished salad in a salad bowl, garnish with canned cherries and greens, and serve either in portions or in a large salad bowl. The cherries can be replaced with canned plums or sloe.
