Mastava
Mastava is a type of soup. Besides Kyrgyzstan, it is prepared in many countries of Central Asia.
Ingredients:
500 g of meat,
100 g of melted butter or internal fat,
300 g of rice,
2 onions,
a bunch of green onions,
2-3 cloves of garlic,
2 carrots,
3-4 tomatoes or 2 tablespoons of tomato paste,
300 g of potatoes,
dill,
black and red pepper.
Heat the oil, add the chopped onion, and fry until golden brown, then add the diced meat, salt it, and fry for a while longer. Add the chopped tomatoes or tomato paste, fry, and pour in water.
After 30-40 minutes once the contents of the pot boil, add the sliced carrots, crushed garlic, and rinsed rice, and stir. When the rice swells and softens, add the coarsely chopped potatoes.
Cook until ready over low heat. Before removing from heat, season with dill and other herbs. Let the soup cool slightly, and if desired, season each serving with 2-3 tablespoons of ayran, green onions, and pepper, and serve. Mastava can be made from rice husks or rice with mung beans; you can also use pilaf made the day before. By the way, some say that mastava is yesterday's pilaf with potatoes mistakenly added, and to correct the mistake, it was watered down and boiled. But that is not true. Try making it, and you will understand the difference.
