If you want to experience the charm of the nomadic life of a Kyrgyz shepherd and feel like a free herder in the valleys of Kyrgyzstan, then you can simply prepare a real Kyrgyz shepherd's soup.

The base of most soups is broths made from meat, poultry, game, and vegetables. In the menu, soup usually comes first or follows a cold appetizer. Prepare shepherd's soup according to our delicious and quick culinary recipe from the national Kyrgyz cuisine.

Ingredients:

lamb 430 g.
flour 120 g.
egg 1 pc.
tomato paste 2 tbsp
medium radish 1 pc.
jussai 40 g. or young green garlic (scapes) - to taste
garlic 3 cloves
onion 1 pc.
tail fat 50 g.
or margarine 50 g.
bones 400 g.
salt to taste
spices to taste

Fry pieces of tail fat, add the sliced meat and fry again until golden brown. Then add the blanched radish, chopped onion, pepper, and fry until half-cooked together with the meat, add tomato paste and a little bone broth that has been previously boiled in the usual way.

Knead a stiff dough with the egg, roll it out thinly, and cut it into diamonds or squares.

In the boiling broth with meat and vegetables, add the cut dough, cook for 3-5 minutes, and add finely chopped garlic. Now, into the pot with the finished soup, you need to throw in the chopped jussai. If this component is not available, it can be replaced with young garlic greens.

Before serving, add herbs.

The shepherd's soup turns out to be very hearty and aromatic, and the taste of garlic gives it a special piquancy.

Serve in large bowls.
