Zhenmomo - Recipe of Kyrgyz Cuisine

Zhenmomo (dough balls)
The basis of various flour dishes is dough. The Kyrgyz people have long prepared hot dishes using dough.
Here is another product made from dough
Ingredients
200 g of wheat flour,
12 ml of cotton oil,
1 ½ g of baking soda,
6 g of yeast,
30 g of flour (for breading),
sugar,
salt.
Cooking method
Make a sour dough from part of the flour, 40 ml of water, and yeast, adding salt. From the remaining flour and 40 ml of water, with the addition of salt and sugar, make a fresh dough. When the yeast dough rises, combine it with the fresh dough, rub it with a baking soda solution, then add cotton oil, roll the ball in flour several times, and rub it with soda. Divide the dough into pieces, shape them into rounds, place them on a rack (kaskan), and steam them like manti for 40–50 minutes.
Serve zhenmomo with tea.
