How to easily and quickly prepare national dishes at home. Kyrgyz-style stew with boiled diamond-shaped dough and vegetables.
Chef Sanjar Shakiev from the ethnocomplex "Supara" demonstrates how to cook the stew.
Ingredients:
flour — 400 g;
egg — 1 pc.;
lamb fillet — 150 g;
potatoes — 150 g;
tomato paste — 20 g;
onion — 30 g;
carrot — 40 g;
bell pepper — 50 g;
tomatoes — 50 g;
water — 300-400 ml;
salt and black pepper to taste.
Cut the meat into large cubes and fry it in a cauldron with hot vegetable oil. Dice the onion, and cut the carrot and bell pepper into large strips.
Add the vegetables to the meat, then add the tomato paste. Mix everything and sauté for 3-5 minutes. Then pour in water or broth, bring to a boil, add the potatoes, and simmer the dish on low heat for another 40-50 minutes until ready. 5-10 minutes before finishing, add spices to taste and, if desired, diced tomatoes.
Knead a stiff dough from flour, water, eggs, and salt. Roll it out thinly (like for noodles) and cut it into diamond shapes, boiling them in salted water or meat broth.
When serving, place the diamond-shaped dough and the meat with vegetables on a plate, and sprinkle with herbs. Serve with the resulting broth.
