Lamb Soup with Beans


Loya Ash is the name of a Kyrgyz soup made with lamb, beans, vegetables, and herbs. I recommend using this culinary recipe to try authentic Eastern cuisine. Moreover, it is a very tasty, nutritious, and healthy soup.

Ingredients:

Lamb - 400 g
Beans - 250 g
Tomatoes - 3 pcs.
Potatoes - 4 pcs.
Butter - 1 tbsp.
Sour cream - 150 ml
Onion - 2 pcs.
Garlic - 2 cloves.
Carrot - 2 pcs.
Dill - 3 tbsp.

Before starting to prepare Loya Ash, you need to prepare the beans. It is best to do this the night before.

So, soak the beans in water overnight to soften them.

The next day, rinse and clean the lamb from membranes, and cut it into pieces. Next, peel and chop the onion, garlic, carrot, and tomatoes.

Put the oil in a frying pan, heat it, and sauté the meat a little. After the meat, add the vegetables to the pan and stew everything together for about 15 minutes.

Then transfer everything to a pot, add water, add the beans, and cook on low heat. The dish will be ready when the beans are cooked. The cooking time for the beans may vary and depends on their quality, variety, age, etc.

15 minutes before the soup is ready, add the chopped potatoes.

When Loya Ash is cooked, add the herbs and sour cream, and serve it hot immediately.
