Shishkebab (lamb shashlik)
Shishkebek
Shishkebek is a dish from Kyrgyz cuisine, consisting of kebab made from lamb or beef, marinated in onions and vinegar with the addition of spices.
Ingredients:
Lamb — 1 Kilogram (or veal)
Onion — 2-3 Pieces
Salt, pepper, meat spices — To taste
Vinegar — 1 Teaspoon
Vegetable oil — 50 Milliliters
To prepare shishkebek, take lamb or veal. For lamb, you will need the loin or the hip part. For veal, it is better to choose a clean piece, such as for making a cutlet, a tenderloin. Cut the meat into small pieces of about 5 cm. Add sliced onions to the chopped meat. Add a little salt, sugar, and spices. Sugar is added to reduce the acidity of the vinegar and onion. You only need a small amount, just a pinch will suffice. Mix the onion, meat, and spices.
Mix a few tablespoons of vegetable oil with vinegar. Pour this mixture over the meat and mix well with your hands.
Place the meat in the refrigerator (covered with plastic wrap) for 12 hours.
After marinating, thread the meat onto skewers and grill over glowing coals.
Serve the shishkebek at the table. A delicious kebab will be ready for you at home.
Worried that you don't have a fire and a grill? Just use a grill pan or a rack in the oven; the effect will be almost the same. The grill gives it the aroma of a campfire.
