Yutaza (a dish made from sour dough, steamed)
Yutaza is a national dish of Kyrgyz cuisine that will appeal to those who love steamed dishes. It is a very interesting yet simple recipe. Yutaza is made from yeast dough, which is greased with oil, rolled into tubes, and steamed.
Ingredients:
Wheat flour - 1.5 cups
Warm water - 0.5 cups
Dry yeast - 0.5 tsp
Salt - 0.5 tsp
Vegetable oil - 2 tbsp
Preparation:
We will prepare a non-proofed yeast dough for yutaza.
Pour warm water into a bowl, add dry yeast and salt. Mix the ingredients.
In a separate deep plate, sift the wheat flour. Pour the water with yeast and salt into the sifted flour.
Knead the dough, which should be elastic.
Place the yeast dough for yutaza in a warm place for 2-4 hours, covering it with a towel.
Divide the risen dough into 4 parts. Stretch each piece of dough by hand into a thin square or oval (a rolling pin can be used for convenience).
Grease the rolled-out dough with vegetable oil (stretch it by hand into a very thin layer).
Roll the dough into a roll (in the shape of a tube), pinching the edges.
Steam the tubes (15-20 minutes). If you don’t have a steamer, you can prepare yutaza on a rack placed over a pot of boiling water and covered with a tall lid.
Before serving, sprinkle with powdered sugar.
Serve the finished yutaza with tea.
