For preparing main dishes, meat, meat by-products, poultry, fish, flour, eggs, vegetables, cereals, and herbs are used. Various types of heat treatment are applied: boiling, stewing, steaming, braising, frying as the main method, deep-frying, and grilling over coals.

Dishes of modern Kyrgyz cuisine can be served with any sauces and side dishes. Here is one of them.

For the recipe, you will need:

chicken (whole) - 600g
butter - 60g
onion - 120g
potatoes - 400g
carrots - 100g
fresh tomatoes - 200g
salt, spices - to taste
herbs - to taste.

Place the head, legs, and wings of the chicken in a pot, cover with cold water, and bring to a boil. Skim off the foam, then simmer on low heat for about 1.5 hours until the meat is cooked. Then remove the meat and strain the broth.

Cut the chicken into small pieces. Place the chicken in a heated frying pan, season with salt, and fry in butter until browned on all sides. Transfer the chicken to a bowl, and add the chopped onion to the frying pan. Sauté the onion until golden, then transfer to a separate bowl. Add more oil to the frying pan and add the diced potatoes. Season the potatoes with salt and fry until golden brown.

Grate the carrots coarsely. Cut the tomatoes into wedges. In a clay pot, layer the ingredients: fried chicken and potatoes, sautéed onion, carrots, and tomatoes. Pour hot strained broth over the contents of the pot, and season with salt and spices to taste.

Send the dish to the oven or a baking stove and stew until the meat and vegetables are cooked. Serve the finished ysyk took in the pot, sprinkled with fresh chopped herbs.
