Aigul Cookies


Very tasty, delicate in flavor. Just melts in your mouth. Very easy to prepare; the main thing is to use good quality butter, and then the cookies will turn out well. The amount of sugar can be reduced if it is too sweet. To connect the cookies, use boiled condensed milk. Thick jam or thick cream also works well. It is important to chill the dough well before baking; you can freeze a piece of dough or place the baking tray with the cookies in the freezer.

Ingredients for making cookies:

sifted premium flour 200 g
sugar 110 g
butter 3 tablespoons (approximately 80 grams)
eggs 2 pcs
any jam 1.5 tablespoons

Method of preparation:

Beat the butter separately until fluffy. Beat the whole eggs (well chilled) with sugar until foamy, so that the mixture increases 2-3 times, then add the butter in small portions, gently mixing with a wooden spoon from top to bottom. Pour in the flour and knead a rather thick dough (but not too stiff). Divide the dough into parts. Roll each part into a layer 7-8 mm thick, cut out small circles about 2.5 cm in diameter, place them on a baking tray (which does not need to be greased), and bake at a moderate temperature (180-190°C) until done, but do not dry them out. Then, glue the cooled circles together in pairs with a thin layer of jam or jelly. Decorate the top of the cookies with chocolate icing or glaze, and you can create a design using a pastry syringe or a parchment cone. Instead of icing, you can spread jam or jelly on top and sprinkle with chopped nuts.

To get beautiful cookies, roll the dough into balls, place them on a plate, and freeze in the freezer for 30 minutes. (You can also place the dough directly on the baking tray and put it in the cold together.)
