Kattama (dough product)
This is a bread made from yeast dough, baked in a pan with a large amount of oil or kaymak — thick cream. Kattama with onion filling is often found. They are very easy to prepare, so in many families, they replace regular bread. The taste is enhanced by the presence of fresh green onions: during frying, they become a bit softer but generally retain their natural flavor.
Ingredients:
Wheat flour 80
Vegetable oil 50
Green onion
Yeast 2
Meat broth 150
Salt
In warm water, dissolve the yeast, add salt, knead a thick dough, and place it in a warm place for fermentation for 3-4 hours. During the fermentation process, the dough is kneaded twice. The finished sour dough is divided into pieces, rolled out like for noodles, topped with a layer of chopped sautéed green onions mixed with oil, rolled into a log, and folded 3-4 times into a ball. Then it is rolled out again into a round flatbread about 1 cm thick and fried in a small amount of oil in a pan. The broth is served separately.
These flatbreads are suitable for any meat dishes and also for vegetable dishes. The crispy crust on the outside and soft texture on the inside are the main features of kattama.
