Ancient dish of nomads - Töö tukum

People tell stories about an interesting meat dish called "Töö tukum." This dish is prepared on special occasions when waiting for a very honored visitor from another country, showing deep respect for the guest. It is said that when this dish was being prepared, the aroma of the meat spread throughout the surrounding area. To make it, four types of animals were used: a camel calf, a foal, a calf, and a lamb. They tried to use smaller animals. First, they prepared the camel calf, cleaning out all the insides, then placed the foal inside, also having removed its entrails beforehand. Next, they inserted the lamb into the foal using the same method, and inside the lamb, they placed a quail, which contained quail eggs that were very important to the Kyrgyz people. The Töö tukum was skewered on a spit made of hard wood and began to be cooked over a fire. This dish took about one to one and a half days to prepare. After the meat was cooked, it was removed from the spit and cut into layers.
