Karta – a popular dish in Kyrgyzstan.

To prepare the meat delicacy karta, we will need the following ingredients according to the recipe:
Horse meat, karta (the thick part of the large intestine)
salt
green pepper - to taste
dill - to taste

The intestines are thoroughly washed in cold water, cleaned on both the inside and outside, and turned inside out with the fatty side in. Then, they are soaked in cold salted water, tied at both ends, and boiled in an open pot for 2-2.5 hours. During boiling, the intestines need to be turned periodically. The dish is served cold. Before serving, it is cut into rings. Sliced vegetables and a radish salad are served alongside the karta.

Karta can also be dried and smoked. For drying, karta is sprinkled with fine salt and kept in a cool place for 1-2 days, then dried. Karta is smoked for at least a day, then dried for 2-3 days.
