Salad 'Ala-Archa'

Salad "Ala-Archa" is a traditional Kyrgyz dish named after one of the most famous ski resorts in Kyrgyzstan. The name "Ala-Archa" translates to "multicolored stones" or "stone mountains." This salad is one of the symbols of Kyrgyz cuisine and is distinguished by its bright and juicy flavors.

One of the features of the "Ala-Archa" salad is the use of meat.

Ingredients:
100 g boiled beef, cut into thin strips;
3 cloves of garlic, minced;
1 green radish;
1 medium carrot;
1 tbsp vinegar;
2 tbsp olive or vegetable oil;

For the omelet:
2 chicken eggs;
50 ml milk;
1 tsp vegetable oil;
salt;
spices.

Boiled meat, radish, carrot, and omelet are cut into strips, then vegetable oil, vinegar, salt, and pepper are added. The mixture is combined with chopped garlic, piled into a salad bowl, and garnished with pieces of boiled meat and finely chopped omelet.

To prepare the omelet, lightly beat the eggs, add milk and a pinch of salt. Pour the omelet mixture into a greased baking tray in a layer of 2.5-3 cm and place it in the oven (180-200°C) for 8-10 minutes. It can also be made in a skillet; add 1 tsp of vegetable oil to the skillet and cook the omelet over low heat. Let it cool and cut into thin strips. The finished omelet should have a firm texture.

Note.
You can reduce the amount of meat by up to 50%. The meat can be marinated in a sauce made from lemon juice, garlic, salt, spices, and herbs. Then the meat is grilled or pan-fried until cooked and cut into thin strips.

There is a sauce option. It is made from sour cream, mayonnaise, mustard, lemon juice, salt, and pepper. The sauce is added to the salad before serving and mixed with the vegetables and meat to give the entire dish a unified flavor and make it juicier.

Pomegranate seeds are added to give the salad a special touch.

Salad "Ala-Archa" is usually served on a large platter or in a bowl garnished with herbs. It is perfect as a standalone dish for lunch or dinner, and can also be used as a side dish for the main course. Due to its fresh and light taste, salad "Ala-Archa" is popular both in Kyrgyzstan and beyond.
