- Alyna, born in 1995 in the village of Bayetov, received her education at the Shükürbek Beyshenaliev school and then pursued higher education. In 2014, she married Adilet Tokon uulu, who is now the village head (ayil bashchy) in Ügüt, which is part of the Bayetov rural area. They have two sons and three daughters. For 8 years, Alyna has been working as an elementary school teacher at the Musa Bayetov secondary school.
The teacher noted that the process of preparing olobo took her an entire week due to the need to collect milk.
“Since childhood, I have watched my mother prepare olobo by pouring milk into the lungs of sheep and goats. It was a familiar process to me. After getting married, I also saw my mother-in-law prepare olobo. This year, I decided to try making olobo from horse lungs for the first time. My husband Adilet, being the village head, said that we would prepare Kyrgyz dishes for Nowruz, and I suggested he find horse lungs. The next day he brought them, and I needed to collect milk,” she shared.
Alyna reported that 80 liters of milk and 5 liters of melted butter were used to prepare the dish.
“The lungs were very large, so I immediately placed them in a 100-liter cauldron and started pouring in the milk. Otherwise, it would have been difficult for us to lift them when they were filled with milk. First, I inflated the lungs and opened the inner channels. Then I heated two cauldrons of water and rinsed the lungs from the inside. After that, I poured in 5 liters of melted butter and began to add warm milk. I milk three cows myself, but it wasn’t enough, so I collected milk from neighbors. Since it was difficult to do alone, Aina Mursalieva helped me. We managed it only after 5 hours. After cooking, we participated in the contest for the “Best National Dish,” which took place in the village of Bayetov in honor of Nowruz. We didn’t win, but in the “Best Yurt” contest, the village of Ügüt took third place and received a cash prize. The olobo made from horse lungs turned out very tasty and resembles cheese,” Alyna shared.
