"Ulburchok" - the oldest national dish


In traditional cuisine, there were dishes with meaning, that is, speaking dishes.

“Ulburchok” is not just food, but a dish that gives a person a sense of dignity, self-respect, and a good mood. But the most interesting thing is that the recipe for this ancient national dish has been preserved by ethnic Kyrgyz living in the village of Shaty in China. It is they who told researchers the story of its origin and the secret of this unique product.

According to them, our ancestors prepared “ulburchok” when they welcomed children living far from their parents. Usually, these were a daughter and son-in-law, but they could also be close friends or simply loved ones.

So let’s recreate the ancient recipe! What ingredients do we need?

- lamb heart bag - 1 piece;
- minced meat - 150g - 200g;
- tail fat - 50g - 100g,
▫️salt, pepper to taste.

Cooking method:
Take the heart of a large ram or calf, remove the membrane, carefully inflate it, and lightly dry it. Prepare the minced meat separately, adding tail fat, salt/pepper, and fill the heart bag with this minced meat. That’s it!

“Ulburchok” is boiled over low heat for 1.5 - 2 hours. It is served chilled to a specific person, which indicates the host's respectful attitude towards the guest.
