Olivier Index
The classic Olivier consists of the following components:- boiled potatoes;
- boiled carrots;
- boiled sausage or meat;
- eggs;
- pickled cucumbers;
- canned green peas;
- mayonnaise.
All ingredients are diced and mixed with mayonnaise.
To calculate the cost of one serving of Olivier, we based it on the following proportions: 400 grams of green peas, 200 grams of mayonnaise, 500 grams of each vegetable (potatoes, carrots, cucumbers), 500 grams of sausage, and five eggs.

The minimum price for this salad is 563 soms, which is 133 soms more than last year. The average cost of Olivier amounted to 658.5 soms, increasing by 22 soms over the year. The maximum price slightly decreased, while the prices for sausage, carrots, and mayonnaise increased. The prices for eggs remained unchanged.
For comparison: last year, the minimum cost of Olivier was 429.5 soms, in 2023 it was 385 soms, and in 2022 it was 454.5 soms.
Cost of Herring Under a Fur Coat
In recent years, we have also been calculating the expenses for another popular New Year's salad — herring under a fur coat.To prepare it, you will need:
- potatoes;
- carrots;
- beets;
- eggs;
- onions;
- herring;
- mayonnaise.
The ingredients are finely chopped and layered.
To determine the index for herring under a fur coat, we based it on the fact that one serving requires 400 grams of potatoes, 350 grams of herring, 300 grams of beets, 200 grams of carrots and mayonnaise, 100 grams of onions, and two eggs.
The minimum cost of this dish is 224.5 soms, which is 8 soms less than last year. At the same time, the maximum price increased by 40 soms compared to 2024. Nevertheless, herring under a fur coat remains an affordable snack, with its price being almost half that of Olivier.
Fruit Platter
Speaking of other dishes on the New Year's table, it is worth noting that they vary depending on the family. However, a fruit platter is present in almost every home. Typically, a standard set is purchased — oranges, tangerines, bananas, kiwis, and apples.
If you consider that for the New Year's table you plan to buy half a kilogram of each type of fruit, you will need an additional 400-550 soms for these expenses, which corresponds to last year's level.
