Last week in Bishkek, there was a mass poisoning incident that affected 24 people, all of whom consumed shawarma from the fast food restaurant "Daamduu." This establishment was fined and closed.
- Fast food includes many ingredients — meat, vegetables, herbs, and sauces, which increases the risk of contamination if sanitary standards are not followed.
- Sauces and fresh herbs, which often do not undergo heat treatment, are particularly dangerous.
- it is necessary to store products correctly;
- ensure sufficient heat treatment of meat and semi-finished products;
- prevent cross-contamination, where bacteria can be transmitted through dirty hands, clothing, knives, and cutting boards.
Moreover, open food preparation is unacceptable. The food block should be separated by glass or transparent plastic partitions, and the transfer of finished dishes should be done through a special window.
Customers and waitstaff should not have unrestricted access to the kitchen. The personal hygiene of workers and their knowledge of food preparation technologies are also of great importance.
To avoid food poisoning, doctors advise customers:
- to pay attention to the sanitary condition of the establishment;
- to be cautious of suspiciously low prices and excessively large portions;
- not to buy food in places where there is a lack of cleanliness and order, as well as no water.
